We all use a simple but useful tool for draining cooked pasta, the colander. The colander has some other use besides only draining pasta but let’s leave it for later.
Almost all the chef around the globe uses the simple method to drain cooked pasta. Use a separate pot and keep the colander on it and pour the boiling pasta and pasta water in it. Those who don’t want to store the water pour the pasta+water into the colander on the sink. Many sizes of pasta drainers are available at the different price point. You need an ideal shape and size that fit into the most size of pots in your kitchen.
However, these are the list of colanders for any kitchen. After all, who else can handle better than a sieve?
Drain Pasta water in a colander
So the method is very simple. At first, you want to cook your pasta at least 90%. Don’t cook the pasta/noodles/spaghetti thoroughly. It will overcook when you sauté them with rest of ingredients.
However, when your pasta is ready to drain the pasta, low the flame and put on top of the pot. Take the oven mitts and hold the colander and pot together. Make sure it fits on to top perfectly.
Now carefully start to drain to lot boiling water on the sink. Sometimes spaghetti try to come out through the hole of the pasta drainer. That’s fine you will not lose many noodles form it. For the safe side, you can add another pot if you want to store the pasta water for further cooking.
Make your pasta water like a pro
Now you have a right amount of yellowish pasta water. It’s enriched with lots of starch, some olive oil, and salt. You put salt and oil in the pasta water while boiling, right? If you don’t, you are missing few essential things about making it. Oil helps your cooked pasta to be separated well. Boiled pasta or noodles tend to stick together in no time. Oil prevents this tendency and keeps them fresh.
The salt is better added to at start point before adding the pasta. It will penetrate in pasta better than later. But be careful when adding more salt while adding the pasta into sauce. Otherwise, your pasta will be too salty.

Make the sauce better with pasta water
While preparing the sauce, use the pasta water instead of regular water and corn flour. It will add the same effect infect better than the cornstarch mix water.
It makes the sauce silk and equally delicious. Mainly it works best with tomato sauce or any non-dairy sauces.
